If you are crunched for time, then these cookies are the perfect answer! They are super-easy and take almost no time at all to make. In fact, they are so easy to make, that older kids can make them by themselves and younger ones can join in (with some supervision of course).
Thumbprint cookies are a classic type of cookie that appears on Christmas cookie trays all over the country. There is a reason they are a staple on cookie platters – they are so beautiful and really easy too. Forget about complicated recipes with a long list of ingredients. There are just 6 simple ingredients in these cookies.
Sugar-Free Raspberry Jam
Save yourself time and just buy a jar of sugar-free raspberry jam. Included is a recipe for keto-friendly raspberry jam because I really enjoy making recipes with fresh fruit. I can control how sweet it is and the consistency too.
I used raspberries because they are a type of fruit with very few carbs. In one cup of fresh raspberries, there are 5g net carbs. That might seem really high, but you only use a little dollop of jam on each cookie.
Plus, when you add chia seeds to the raspberries, you increase the fiber content, which decreases the net carbs.
Ket0-Friendly Jam Recipe
There are two types of fruit that have a similar number of net carbs – blackberries and strawberries. Blackberries also have 5g net carbs in each cup. Strawberries only have a little bit more, 6g net carbs in each cup.
If you wanted to, you could make sugar-free blackberry jam or some sugar-free strawberry jam for the thumbprint cookies.
The recipe for sugar-free raspberry jam makes 2 cups, so you’ll probably have some leftovers after you make the cookies. It tastes delicious on top of some ket0-friendly toast.
Raspberry Almond Thumbprint Cookies
The sweet and slightly tart raspberry jam is the perfect thing on top of these crispy almond flour cookies. Just like traditional thumbprint cookies, these keto-friendly ones have a nutty undertone.
Since I used almond flour in the cookies instead of wheat flour, you don’t have to enhance the nutty taste with the almond extract (like you do for other recipes).
Almond Flour Thumbprint Cookies
When you make these cookies, make sure you buy almond flour, not almond meal. If you use almond meals, the cookies will have a grainy texture.
Another tip is to sweeten the cookie dough with a granular sugar substitute. If you use a liquid, brown sugar or confectioner’s sugar substitute it might alter the texture of the cookies.
If you don’t have cream cheese, you can substitute it with either Neufchâtel Cheese or Mascarpone. Both of them have similar textures to cream cheese.
Low-Carb Shortbread Cookies
A shortbread cookie is basically a cookie without a leavening agent like baking powder or baking soda. They are usually crispier and made with lots of butter.
These thumbprint cookies are made with a low-carb shortbread base. They melt in your mouth as you bite into them. You are going to love how they taste!

INSTRUCTIONS:
1. In a bowl, mix together butter, cream cheese, and sugar.
2. Add almond flour, egg, and vanilla.
3. Cover dough and chill in the refrigerator for at least 20 minutes.
4. Roll dough into small balls and place on a prepared baking sheet.
5. Using your thumb or a spoon, press down the center of each cookie to create a thumbprint.
6. Spoon a small amount of raspberry jam in the center of each cookie.
7. Bake at 325 degrees F. for approximately 18-20 minutes.
8. Remove and let the cookies cool on a rack.

Instructions

Sugar-Free Raspberry Jam
In a sauce pan, add raspberries and begin to warm over low to medium heat.
As berries start to warm, mash with a fork or potato masher until you have a fairly smooth consistency.
Add in sugar and cook for another 2-3 minutes.
Remove from heat and add in chia seeds along with vanilla extract.
Stir well, and let sit.
Once the jam cools, place it in an airtight container in the refrigerator for a few hours or overnight. The chia seeds will continue to soak up the liquid and create a thicker, jelly-like consistency.
